Ingredients
Extra-firm tofu, pressed and cubed (1 block)14 oz
Shelled edamame, thawed1½ cups
Broccoli florets2 cups
Snap peas1 cup
Cooked brown rice2 cups
Low-sodium soy sauce or tamari3 tbsp
Sesame oil1 tbsp
Cornstarch mixed with 2 tbsp water1 tbsp
Aromatics (3 cloves garlic, 1 tsp fresh ginger)
Instructions
  1. 1Press tofu for at least 15 min; cut into 1-inch cubes.
  2. 2Sear tofu in a hot oiled pan until golden on two sides, about 8 min total. Remove.
  3. 3Stir-fry broccoli and snap peas 3–4 min until crisp-tender.
  4. 4Add garlic and ginger; cook 30 seconds.
  5. 5Return tofu; add edamame, soy sauce, and cornstarch slurry. Toss until sauce thickens.
  6. 6Serve over brown rice. Portion into 4 containers.
